Dark cherry yogurt panna cotta for two

A silky cold custard that tastes like the yogurt itself, set with gelatin to give you something to spoon into. The dark cherry flavor carries all the work while you relax; this comes together in ten minutes and waits in the fridge for dinner time.

Serves 2. 240 minutes, 10 at the stove.

  • 1.5 sheets gelatin sheets
  • 1/2 cup heavy cream

  • one 5.3 oz container oregon dark cherry flavored greek lowfat yogurt, oregon dark cherry (Tillamook)

Staples

  • 2 tablespoons sugar

  1. Bloom 1.5 gelatin sheets in 2 tablespoons cold water for five minutes.
  2. Warm 1/2 cup heavy cream and 2 tablespoons sugar in a small saucepan over low heat until the sugar dissolves and the cream steams, about two minutes; do not boil.
  3. Remove from heat, add the bloomed gelatin, and stir until it dissolves.
  4. Pour the gelatin mixture into a bowl and let it cool to room temperature, stirring now and then, about five minutes.
  5. Whisk in the entire container of yogurt until smooth and combined.
  6. Divide between two serving glasses or bowls and refrigerate, covered, for at least three hours until set.

Note The panna cotta keeps for two days in the fridge. Serve chilled on its own, or with a shortbread or butter cookie on the side. You can swap the yogurt for any full-fat yogurt with a fruit flavor you like, though the dark cherry Tillamook sets this particular version apart.
