Strawberry black currant yogurt fool

A fool is a simple British dessert that doubles as dinner when you dress it up. Fold whipped cream into yogurt, layer it with crumbled shortbread, and you have something that feels far more considered than the ten minutes it takes. The yogurt's tartness cuts the richness of the cream.

Serves 2. 15 minutes, 10 at the stove.

  • 1/2 cup [120 ml] heavy cream

  • one 5 to 6 oz container [150 to 170 g] strawberry black currant greek lowfat yogurt

  • 4 tablespoons [55 g] butter
  • 1 cup [120 g] flour
  • 1/4 cup [50 g] sugar
  • 1/4 teaspoon salt

  1. Heat your oven to 375°F [190°C]. Rub 4 tablespoons of butter into 1 cup of flour with a pinch of salt until the mixture looks like coarse sand, then stir in 1/4 cup of sugar. Press the dough firmly into a small baking sheet or pie tin and bake until light gold, about twelve minutes. While it bakes, whip 1/2 cup of heavy cream to soft peaks.
  2. Cool the shortbread for two minutes, then break it into bite-size pieces. Fold the yogurt gently into the whipped cream until just combined but still streaky.
  3. Layer the fool into two bowls or glasses, alternating yogurt cream with shortbread crumbs, and serve at once.

Note Crumble extra shortbread over any leftovers just before serving. The fool keeps in the fridge for one day; whipped cream weeps if left longer. Serve with tea or coffee, or add a small glass of dessert wine. To make it stretch for four, use one container yogurt with 1 cup cream.
