Swiss cheese and ham open sandwich

Two open-faced sandwiches topped with melted Tillamook Swiss and a fried egg, built on toasted bread with ham and mustard. This cheese has the right texture to brown nicely under the broiler, and the whole thing comes together in the time it takes to preheat the oven.

Serves 2. 15 minutes, 10 at the stove.

  • 4 slices good ham slices
  • 4 slices bread

  • 1 tablespoon butter
  • 1 tablespoon oil
  • to taste salt
  • to taste pepper

  1. Preheat the broiler to high. Toast 4 slices of bread until golden on both sides, about 3 minutes, then lay them on a sheet pan.
  2. Lay 2 slices of ham on each piece of toast, then top with 2 slices of Tillamook Swiss per sandwich. Slide under the broiler until the cheese melts and browns at the edges, about 2 minutes.
  3. While the cheese broils, heat 1 tablespoon oil and 1 tablespoon butter in a small skillet over medium heat. Crack 2 eggs into the pan, season with salt and pepper, and fry until the whites are set but the yolk still trembles, about 3 minutes.
  4. Top each sandwich with a fried egg and serve warm.

Note Swap ham for roast turkey or bacon. Leftovers are best eaten right away; wrap the sandwich and refrigerate up to one day. Serve with a simple green salad or pickled vegetables on the side to cut the richness.
