Veggie cream cheese spread on toast with greens

A quick supper built on the farm-style cream cheese spread in the fridge, scattered over warm toast and crowned with a fresh salad. The spread brings vegetable flavor and creaminess; the greens bring crunch and life to the plate.

  • 4 slices bread for toasting
  • 2 handfuls fresh greens or salad mix

  • 8 ounces very veggie farmstyle cream cheese spread, very veggie

  • 1 tablespoon butter

  1. Heat 1 tablespoon butter in a large skillet over medium heat until melted and foaming. Lay 4 slices of bread in the skillet and toast for two minutes per side until golden, turning once. The bread is done when it has color and is crisp on the outside.
  2. Divide the toasted bread between two plates. Spread 2 ounces of the veggie cream cheese spread on each slice, dividing evenly. The spread softens from the warm toast and becomes more spreadable.
  3. Toss 2 handfuls of fresh greens with a pinch of salt and pepper. Pile the greens on or alongside the toast to serve.

Note Swap the greens for cucumber slices, tomato, or shredded carrots if you prefer. Leftover spread keeps refrigerated for up to two weeks and works as a dip or spread for crackers and vegetables. Serve with a simple soup or a side of fresh fruit to round out the meal.
