Crispy bean burritos with cheese sauce

- 2 tablespoons oil
- pinch salt
- Heat 2 tablespoons of oil in a large skillet over medium-high heat until it shimmers, about 2 minutes. Unwrap the 2 burritos and place them seam-side down in the pan.
- Cook the burritos for 3 to 4 minutes on the first side without moving them, until the bottom is golden and crisp. This is the cue to flip.
- Flip each burrito gently and cook for another 3 to 4 minutes on the second side until golden all over. Transfer to plates.
- Divide 1 cup of salsa between the two plates and dollop each burrito with a quarter cup of sour cream. Serve at once.
Note Swap the salsa for hot sauce or pico de gallo if you like. Leftovers keep for two days covered in the fridge; reheat gently in a skillet. Serve with shredded lettuce, diced tomato, and more sour cream on the side to stretch the meal.
