Crispy jalapeno popper rolls with quick salsa

  1. Heat the oven to 425°F (220°C). Spread the frozen popper rolls on a baking sheet without thawing or overlapping them. Bake until the edges are deep golden and crisp, about 12 to 14 minutes; they should feel firm when you press one.
  2. While they bake, chop 2 tablespoons of fresh cilantro and squeeze the juice of half a lime into 1/3 cup sour cream, then stir in a pinch of salt. This is your quick dip.
  3. Pull the rolls from the oven and let them rest on the hot sheet for 1 minute. Serve them warm with the cilantro sour cream on the side for dipping.

Note If you have a can of black beans, warm them with cumin and serve alongside. The rolls are best eaten right away while they stay crisp; leftovers keep in an airtight container for two days and reheat well at 350°F (175°C) for five minutes. A simple green salad makes this meal feel fuller.
