Pear and vinaigrette salad with roast chicken

This shelf has only a dressing, so I'm building a simple dinner plate around it: roast chicken thighs with a sharp pear and balsamic salad. The vinaigrette is bright and thin, so it pulls together raw greens and soft fruit into something that feels complete without weight.

Serves 2. 45 minutes, 10 at the stove.

To buy

  • 2 thighs, about 10 ounces total bone-in chicken thighs
  • 3 cups mixed salad greens

  • 1/3 cup Walden Farms pear and white balsamic vinaigrette

Staples

  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon oil

  1. Pat 2 bone-in chicken thighs dry and season all over with 1 teaspoon salt and 1/2 teaspoon pepper. Set them skin-side up on a baking sheet and roast at 425°F [220°C] until the skin is golden and a thermometer reads 165°F [74°C] at the thickest part, about 30 to 35 minutes.
  2. While the chicken roasts, wash and spin dry 3 cups mixed salad greens and tear them into bite-sized pieces.
  3. When the chicken is done, divide the greens between two plates and drizzle with half the vinaigrette. Toss gently.
  4. Top each plate with one hot chicken thigh and drizzle the remaining vinaigrette over the chicken and greens. Serve at once.

Note Swap the chicken for fish fillets or a rotisserie bird if you prefer. Leftovers keep covered in the cold box for two days. Serve with bread to catch the pan juices and dressing.
