Avocado oil pasta with garlic and herbs

This shelf holds only avocado oil spray, so tonight is a pantry dinner built around that one ingredient. A simple pasta tossed with garlic, toasted bread crumbs, and plenty of herb-infused oil makes a quick, satisfying meal when you've got nothing else to cook with.

Serves 2. 20 minutes, 15 at the stove.

  • 1 slice bread

  • 6 sprays avocado oil spray

  • 6 ounces pasta
  • 3 cloves garlic
  • to taste salt
  • to taste pepper
  • 2 tablespoons butter

  1. Bring a large pot of salted water to a boil and cook 6 ounces of pasta until al dente, about 8 to 10 minutes depending on shape.
  2. While pasta cooks, toast 1 slice of bread torn into small pieces in a skillet over medium heat until golden and crisp, about 3 minutes, then transfer to a plate.
  3. In the same skillet, spray 3 sprays of avocado oil and add 3 minced garlic cloves, stirring until fragrant, about 1 minute over medium heat.
  4. Drain pasta, reserving 1/2 cup pasta water, then toss the pasta into the skillet with the garlic oil and stir in 2 tablespoons butter and 1/4 cup pasta water, tossing until silky.
  5. Season with salt and pepper, divide between two bowls, top with the toasted bread crumbs, and finish each bowl with 1 to 2 sprays of avocado oil.

Note Swap the bread crumbs for grated Parmesan if you have it. Leftovers keep one day, reheated gently with a splash of water. Serve with a sharp salad of whatever greens and acid you have on hand, or eat alone as a light, quick dinner.
