How to tell it has turned

  1. Bring a large pot of salted water to a boil and cook 8 ounces of pasta until al dente, about 9 minutes; reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, mince 2 cloves of garlic and toast 1/2 cup of walnuts in a dry skillet over medium heat for 3 minutes, shaking often, until fragrant; turn onto a plate.
  3. In the same skillet, melt 3 tablespoons of butter over medium heat and add the minced garlic; cook for 1 minute until the garlic softens and smells sweet.
  4. Pour in 1 cup of heavy cream and crumble in 4 ounces of blue cheese, stirring gently until the cheese melts into a smooth sauce, about 2 minutes.
  5. Add the drained pasta to the cream sauce and toss to coat, adding splashes of reserved pasta water until the sauce reaches a light consistency that coats each strand. Season with salt and pepper to taste.
