What to do with the last of the popcorn

Stale popcorn can be crushed and sprinkled over ice cream or yogurt for texture. Or toss it in a hot oven at 180C for 5 minutes to restore crispness.

How long it keeps
Keeps indefinitely in an airtight container in a cool, dry cupboard. Once popped and exposed to air, it gradually absorbs moisture and goes soft over 3 to 5 days.
How to tell it has turned
It has gone stale when it becomes soft and chewy rather than crisp. Unpopped kernels that don't pop after several minutes have lost their moisture.

  1. Crush a handful of popcorn kernels in a mortar or between two spoons until coarse, about the size of breadcrumbs. Mix with 2 tablespoons flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper on a plate. Beat 1 egg in a shallow bowl.

  4. Pour off the oil. Add 2 tablespoons butter and 2 minced garlic cloves to the pan and let them sizzle for 30 seconds until fragrant. Squeeze the juice of half a lemon over the chicken, then spoon the garlic butter over top.

Note Swap the popcorn for crushed crackers or panko if you prefer. Wrapped in foil, leftovers keep for a day and can be eaten cold. Serve with a green salad or roasted vegetables, or stretch it with rice or a grain of your choice.
