Seared salmon burgers with quick cabbage slaw

Two ready-made salmon burgers get a quick sear in the pan while you make a crisp, tangy cabbage slaw to pile on top. This shelf needs only oil and vinegar to turn into a proper weeknight dinner.

  • 1/2 small head green cabbage
  • 2 tablespoons rice vinegar or apple cider vinegar

  • 2 patties [180g] bell pepper & onion wild-caught salmon burgers

Staples

  • 2 tablespoons oil

  1. Shred one-half small head of green cabbage into a bowl and toss with 2 tablespoons vinegar and a pinch of salt; let it sit while you cook the burgers.
  2. Set a skillet over medium-high heat and coat the pan with 2 tablespoons oil. Once the oil shimmers, place the 2 salmon burgers in the pan and cook without moving them until the bottom is golden, about 4 minutes.
  3. Flip the burgers carefully and cook the other side until golden and heated through, about 3 to 4 minutes more. Transfer to a plate and tent with foil to keep warm.
  4. Taste the slaw and add salt and pepper to your liking. Divide the slaw between two plates, set a warm burger on top of each, and serve right away.

Note Swap the slaw for a tomato salad or arugula if cabbage is not on hand. Leftovers keep refrigerated for one day; reheat gently in a skillet over low heat. Serve with a crusty roll or between two toasted slices of bread for a more substantial meal.
