Cedar plank salmon with teriyaki pineapple

This ready-to-heat cedar plank salmon takes the guesswork out of dinner. The teriyaki-pineapple glaze is already built in, so you just warm it through and let the wood smoke the flesh. Serve it straight from the plank with something green.

  • 1 tablespoon oil

  1. Preheat the oven to 400°F [200°C]. Place the cedar plank salmon on a rimmed baking sheet, brush the top of the fish and pineapple glaze with 1 tablespoon oil to help it brown.
  2. Slide the baking sheet into the oven. Set a timer for 20 minutes, until the salmon flakes easily at its thickest part and the glaze caramelizes at the edges.

Note Swap the cedar plank salmon for regular salmon fillets if you prefer, roasting skin-side down at the same temperature. Leftovers keep in the fridge for two days and taste good cold or reheated gently. Serve with steamed bok choy or a simple green salad to balance the sweet glaze.
