Crisp potatoes with French onion dip

Waxy potatoes roasted until golden, then dressed with a tangy onion dip that replaces gravy. The dip softens the potatoes just enough to eat with a fork, making a warm, savoury side dish that holds its own as dinner.

  1. Heat the oven to 425°F [220°C]. Cut 1 pound of waxy potatoes into 1-inch cubes, toss with 2 tablespoons oil, salt, and pepper, spread on a baking sheet in one layer, and roast, stirring once, until golden and tender, about 25 minutes.
  2. While the potatoes roast, transfer the french onion dip to a small pot or skillet and warm it over low heat, stirring now and then, until hot and loose, about 5 minutes.
  3. When the potatoes are done, divide them between two bowls and spoon the warm dip over each. Taste and season with salt and pepper.

Note Swap the potatoes for cubed cauliflower or waxy sweet potatoes if you prefer. Leftovers keep three days; reheat gently with a splash of water. Serve with a sharp green salad or pickled vegetables on the side to cut the richness.
