Riced cauliflower stuffing, seared and crisped

This shelf stuffing has herbs, cranberries, and stock built in, so it needs only a hot pan and butter to turn into something that tastes like dinner. The crispy edges and soft center make it heartier than it sounds.

Serves 2. 20 minutes, 15 at the stove.

  • 1 package riced cauliflower stuffing

Staples

  • 3 tablespoons butter
  • to taste salt
  • to taste pepper

  1. Heat 2 tablespoons of butter in a large skillet over medium-high heat until foaming, then add the entire package of riced cauliflower stuffing in an even layer, pressing it down gently with a spatula.
  2. Leave it undisturbed for 5 minutes until the bottom begins to brown and crisp, then stir and spread it out again.
  3. Continue cooking for another 4 minutes, stirring occasionally, until the mixture is heated through and the top is golden.
  4. Dot the surface with the remaining 1 tablespoon of butter, season with salt and pepper to taste, and serve straight from the pan.

Note Swap butter for oil if preferred. Keeps covered in the fridge for three days and reheats gently in a skillet. Serve alongside roasted chicken, a grilled pork chop, or a runny egg for a more substantial meal.
