Tuscan cauliflower pizza crust with greens and cheese

A quick pizza built on cauliflower crust from the freezer, topped with garlicky greens and melted cheese. The crust comes ready to bake, so you have dinner in less than thirty minutes. Serve with a green salad or a glass of wine.

  • 4 ounces fresh spinach or kale
  • 1 cup mozzarella cheese, shredded

Staples

  • 1 tablespoon oil
  • 2 cloves garlic
  • pinch salt
  • pinch pepper

  1. Heat your oven to 425°F [220°C]. Unwrap the crust and lay it on a baking sheet, then bake until the edges start to brown, about 8 minutes.
  2. While the crust bakes, warm 1 tablespoon oil in a large skillet over medium heat. Mince 2 cloves garlic and add to the pan with 4 ounces fresh spinach or kale, stirring until wilted, about 2 minutes. Season with a pinch of salt and pepper.
  3. Pull the crust from the oven and scatter the greens evenly over the top, then sprinkle 1 cup shredded mozzarella cheese over everything. Return to the oven and bake until the cheese melts and the edges turn golden, about 8 minutes. Let cool for 2 minutes before slicing.

Note Swap the greens for roasted red peppers, caramelized onions, or mushrooms sautéed with garlic. Leftovers keep in an airtight container for two days and reheat well in a 350°F oven. Serve alongside a simple salad dressed with lemon and oil.
