Cinnamon raisin muffin breakfast bread pudding

Cubed English muffins transform into a warm, spiced bread pudding using the raisins and cinnamon already built into them. This is a weeknight dessert that doubles as comfort, built from what you have on hand and eggs and milk.

  1. Preheat your oven to 350°F [175°C]. Halve 2 cinnamon raisin English muffins and split them open, then cut into roughly 1-inch cubes to get about 2 cups of pieces. Butter a small baking dish and scatter the muffin cubes inside.
  2. Whisk together 2 eggs, 1 cup whole milk, 2 tablespoons sugar, and a pinch of salt until combined. Pour this custard over the muffin pieces, letting them soak for 2 minutes while you work, then gently stir to coat everything.
  3. Dot the top with 2 tablespoons butter cut into small pieces. Slide into the oven and bake until the custard is set at the edges but still slightly jiggly in the centre, about 20 to 25 minutes. The top will brown lightly.

Note Swap the muffins for challah or brioche cubes. The pudding keeps covered in the fridge for two days and reheats in a low oven. Serve warm with a glass of cold milk or coffee alongside.
