Cheese fondue for two

Babybel is a wax-coated cheese that melts beautifully, making it perfect for a quick fondue on a tired weeknight. It's scaled for two, needs only what you have at home, and comes together in minutes with bread for dipping.

Serves 2. 15 minutes, 10 at the stove.

You need 6 pieces mini rolls dairy snack, 1 tablespoon butter, 1 clove, minced garlic, to taste pepper, half a loaf crusty bread.

  1. Remove the wax coating from 6 Babybel pieces and cut them into roughly equal chunks. Dice your half loaf of crusty bread into bite-sized cubes and set aside on a serving plate.
  2. Melt 1 tablespoon butter in a small heavy pot or fondue pot over medium heat, add 1 minced garlic clove, and cook until fragrant, about one minute. Add the cheese chunks and stir continuously until fully melted and smooth, about four minutes. Season with pepper to taste.
  3. Transfer the melted cheese to a warmed fondue pot or serving bowl set over a small flame if you have one, or simply keep it in the warm pot and set it in the center of your table. Provide each diner with a fork or skewer for dipping bread into the cheese.

Note Swap in any mild cheese when Babybel is gone. Keep leftovers covered in the fridge for two days; reheat gently over low heat with a splash of water. Serve with a sharp salad and a crisp white wine to cut the richness.
