Whole grain penne with tomato and basil

You have a ready-to-eat pasta dinner on your shelf: cooked penne in tomato and basil sauce. Heat it gently, add good seasonings and a crisp finish, and this becomes dinner in minutes. Cook mozzarella on top if you have it.

Serves 2. 15 minutes, 5 at the stove.

  • small bunch fresh basil or parsley
  • 2 ounces parmesan cheese

  • 1 package Barilla Italian entrees whole grain penne tomato and basil

Staples

  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 1 clove, minced garlic

  1. Pour the contents of the package into a saucepan and set over medium heat. Warm gently, stirring now and then, until steam rises from the sauce, about 5 minutes. The pasta should be warm throughout.
  2. Stir in 1 tablespoon of olive oil and 1 minced garlic clove. Taste and adjust salt and pepper. Cook for 1 more minute to marry the flavors.
  3. Divide between two bowls. Grate 1 ounce of parmesan cheese over each portion and tear a few leaves of fresh basil or a pinch of parsley on top.

Note Swap the fresh herb for a small pinch of red pepper flakes if you prefer heat. Leftovers keep covered in the fridge for three days; reheat gently in a pan with a splash of water. Serve with crusty bread to catch the sauce and a simple green salad.
