Tuna salad open toast with celery and lemon

This shelf holds a ready-made tuna salad kit, so you need only toast bread, add the tuna and its contents to sliced vegetables, and finish it with acid to brighten what's mostly mayo. A real dinner in under ten minutes.

  • to taste salt

  1. Butter 4 slices of bread on one side each and lay buttered side down in a skillet over medium heat; toast until golden and crisp, about 3 minutes.
  2. While bread toasts, halve the tuna salad kit and set the crackers aside; slice 2 stalks of celery into thin crescents if you have them, or simply chop what vegetables are in the kit finer.
  3. When bread is golden, move to a plate; spoon half the tuna salad onto each of 2 toasts, top with extra celery, squeeze 1/2 lemon over each, and grind salt and pepper to taste.

Note Swap the bread for crackers if you prefer the kit's own, or serve alongside. Leftovers keep refrigerated for one day. Serve with a raw green salad or pickled vegetables to cut the richness of the mayo.
