Mixed berry yogurt fool

A fool is just whipped cream folded into fruit, and here the Chobani drinks become the fruit itself. Since there's no added sugar beyond the allulose, you're making an almost-guilt-free pudding that comes together in the time it takes to whip cream. The cultures mean you get tang with the berries.

Serves 2. 8 minutes, 8 at the stove.

  • 1 cup heavy cream
  • 4 ounces graham crackers or digestive biscuits

  • two 7-ounce bottles mixed berry zero sugar yogurt-cultured dairy drink

Staples

  • 2 tablespoons butter

  1. Crush or crumble 4 ounces of graham crackers into pieces about the size of chickpeas and warm 2 tablespoons of butter in a wide shallow bowl over low heat, then toss the crumbs in the warm butter until coated and set them aside to cool.
  2. Pour 1 cup of heavy cream into a chilled bowl and whip with a whisk or mixer until soft peaks form, which takes about 2 to 3 minutes.
  3. Empty both 7-ounce bottles of the Chobani mixed berry drink into a bowl and fold the whipped cream into it gently until just marbled, no more.
  4. Divide the fool between two serving bowls and scatter the buttered crumbs on top just before eating.

Note Swap the Chobani for any thick yogurt drink and adjust the graham cracker amount if you prefer more or less crunch. Leftovers keep, covered, for a day in the fridge. Serve after dinner with a short glass of sparkling water or a digestif.
