Cinnamon raisin muffin bread pudding

A bread pudding that turns a package of cinnamon raisin English muffins into a warm, custardy dessert that doubles as dinner. It's an old trick for the shelf that's been sitting there, and it needs just eggs, milk, and butter from the kitchen.

Serves 2. 40 minutes, 8 at the stove.

  • 2 large eggs
  • 1/4 teaspoon salt

  1. Heat your oven to 350°F [175°C]. Split 4 cinnamon raisin English muffins and tear them into bite-sized pieces. Butter a 6-by-9-inch baking dish or similar small baking vessel and scatter the muffin pieces inside.
  2. Whisk together 2 large eggs, 1 cup whole milk, and 1/4 teaspoon salt in a bowl. Pour the custard over the muffin pieces and let them soak for two minutes, then stir gently so the pieces are moistened throughout. Dot the top with 2 tablespoons cold butter cut into small pieces.
  3. Slide the dish into the oven and bake until the custard has set around the edges but still jiggles slightly in the center and the top is golden, about 30 minutes.

Note Swap condensed evaporated milk if whole milk is not on hand. Leftovers keep covered in the fridge for two days and taste just as good cold. Serve warm with a spoon and coffee, or with yogurt on the side.
