Cinnamon raisin bagels with whipped ricotta

These bagels are already studded with raisins and cinnamon, so they need only butter and a soft topping to become dessert or a sweet dinner. Toast them until crisp outside and warm through, then spread with whipped ricotta sweetened with honey.

Serves 2. 15 minutes, 5 at the stove.

  • 3 tablespoons honey

  • 1 tablespoon butter

  1. Split the 2 bagels in half and toast them in a toaster or under the broiler until the outside is crisp and the inside is warm, about 5 minutes.
  2. While the bagels toast, stir together the ricotta, 3 tablespoons of honey, and a pinch of salt until the ricotta is light and spreadable.
  3. Spread 1 tablespoon of butter over the cut sides of the warm bagels, then divide the ricotta mixture between them and serve immediately.

Note Swap the ricotta for cream cheese or labneh if you prefer. Ricotta keeps covered in the fridge for five days. Serve with strong coffee or tea, or with a simple green salad on the side to stretch the meal.
