Cinnamon raisin bagel bread pudding

Cinnamon raisin bagels become a warm bread pudding in thirty minutes, the kind of supper that doubles as dessert. The bagels provide both the structure and the sweetness, so you need only eggs, milk, and butter to turn them into something tender and custard-soft.

  • 2 eggs

  1. Heat your oven to 350°F [175°C]. Tear four bagels into bite-sized pieces and spread them in a buttered 8-inch square baking dish, pressing gently so they fit snug.
  2. Whisk together two eggs, one cup of milk, and a pinch of salt in a bowl until no streaks remain. Pour the custard over the bagels, using a fork to nudge them so the liquid distributes evenly.
  3. Dot the top with two tablespoons of butter cut into small pieces, then set the dish in the oven.
  4. Bake until the custard is set but the center yields slightly when you press it with a spoon, about twenty-five to thirty minutes. The top should turn light golden.

Note Swap half-and-half for milk if you want richer custard. Leftover pudding keeps covered in the fridge for two days and reheats in a low oven or microwave. Serve warm with a fork, or set it out to cool slightly and serve at room temperature with yogurt on the side.
