Rancheros bowl with sweet potato, cauliflower, and kale

- 1 package rancheros bowl, sweet potato & cauliflower crumbles
Staples
- 1 tablespoon oil
- pinch salt
- 1 cup cooked rice
- 2 eggs
- Cook 1 cup rice according to package directions if you haven't already, or warm leftover rice gently in a covered pot with a splash of water.
- While rice warms, heat 1 tablespoon oil in a skillet over medium-high until shimmering and crack 2 eggs into it, cooking to your liking; season with a pinch of salt. Transfer to a plate when the whites are set and the yolks are still warm.
- In the same skillet, tip the entire rancheros bowl package and warm over medium heat for 2 to 3 minutes, stirring gently, until the vegetables are hot and the sauce is steaming.
- Divide the warm rice between 2 bowls, top each with half the rancheros mixture, then set one cooked egg on top of each. Crumble 1 ounce queso fresco over each bowl and serve at once.
Note Swap an avocado slice for the cheese if you prefer. Leftovers keep three days, covered, in the fridge; warm gently with a splash of water. Serve with lime wedges and hot sauce on the side.
