Butternut squash and black bean skillet

A warm skillet of roasted squash, apples, and beans that comes together in minutes. The butternut medley has everything you need but depth, which comes from a pan with a little butter and fresh garlic. Serve with rice or alongside a sharp cheese.

Serves 2. 20 minutes, 10 at the stove.

  • 1 package (about 12 oz) Sauté's herb butternut squash medley

Staples

  • 1 tablespoon butter
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Melt 1 tablespoon butter in a skillet over medium heat. Mince 2 cloves garlic and add to the pan, stirring until fragrant, about 30 seconds.
  2. Pour the entire package of butternut squash medley into the skillet and stir to combine with the butter and garlic. Cook, stirring now and then, until heated through and the edges begin to colour, about 10 minutes.
  3. Taste and season with salt and pepper to your liking. Divide between two bowls and serve warm.

Note Swap in crispy sage leaves or fresh thyme if you have them. Leftovers keep in the fridge for three days and warm gently on the stovetop or in the microwave. Serve over rice, couscous, or with crusty bread and a sharp cheddar on the side.
