Grilled zucchini with garlic and herb butter

Green Giant's grilled zucchini strips make a ready-to-use base for a weeknight side that tastes like you worked all day. Warm them quickly in a pan with garlic and herb butter, and you have a vegetable that stands alone or pairs with anything. This shelf alone won't feed two hungry people, so serve it alongside crusty bread and cheese or quick-cooked protein.

  • 1 bag grilled zucchini

Staples

  • 2 tablespoons [30g] butter
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Mince 2 garlic cloves. Melt 2 tablespoons butter in a large skillet over medium heat, add the garlic, and cook until fragrant, about one minute.
  2. Pour the bag of grilled zucchini into the pan, season with salt and pepper, and toss to coat in the garlic butter. Warm through, stirring occasionally, until the zucchini is heated through and the butter is absorbed, about five minutes.
  3. Taste and adjust seasoning. Divide between two plates and serve at once.

Note Swap fresh lemon juice for garlic butter if you have it. Leftovers keep in the refrigerator for three days and can be eaten cold or reheated gently. Serve alongside grilled chicken, fish, or eggs, or fold into pasta with parmesan.
