Maple turkey sausage patties with soft eggs

Maple turkey sausage takes center stage here with soft scrambled eggs that catch the sweet-savory glaze. It's a skillet dinner for two that cooks in one pan and asks little thought after a long day.

  • 6 patties maple turkey flavor fully cooked sausage patties

Staples

  • 1 tablespoon butter
  • 4 eggs
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon butter in a large skillet over medium-high heat until it foams. Lay 6 sausage patties in the pan and warm them until they glisten and the edges brown a touch, about 4 minutes, turning once midway.
  2. Push the sausage to the side of the pan. Crack 4 eggs into the cleared space, then scatter salt and pepper over them. Stir gently as they set, moving them around the pan while the sausage finishes heating through, about 2 minutes more.
  3. Stop when the eggs are soft and just set, still glossy. Tilt the pan to pool any extra butter and drippings over the eggs, then divide everything between two plates.

Note Swap ham or bacon for the sausage if you have it. Leftovers keep in the fridge for one day and are good cold or warmed in a skillet. Serve with toast or over rice to stretch the meal.
