Creamy chicken and rice with lactose-free milk

A quick supper built on reduced-fat milk as the cooking liquid for chicken and rice, finished with a light cream sauce that lets the milk's natural sweetness show through. This shelf leaves you with just milk to build on, so we'll make something honest and simple.

  • 1 pound [450 g] chicken breast
  • 1 cup [150 g] frozen peas or vegetables

  • 3/4 cup [140 g] rice
  • 2 cloves garlic
  • 1 tablespoon butter

  1. Cut 1 pound chicken breast into bite-sized pieces and season with salt and pepper. Heat 2 tablespoons oil in a large skillet over medium-high heat until shimmering, then add the chicken and cook, stirring occasionally, until golden on the edges, about 5 minutes. Transfer to a plate.
  2. Mince 2 cloves garlic and add to the same skillet with 1 tablespoon butter. Stir in 3/4 cup rice and cook, stirring constantly, until the grains are coated and fragrant, about 2 minutes.
  3. Pour 2 cups lactose-free milk into the skillet, add the chicken back in, and bring to a simmer. Reduce heat to low, cover, and cook for 18 minutes until the rice is tender and most liquid is absorbed, stirring once halfway through.
  4. Fold in 1 cup frozen peas or vegetables and cook uncovered for 2 minutes until heated through. Taste and season with salt and pepper as needed. The sauce should be creamy and coat the rice lightly.

Note Swap the chicken for thick white fish fillets added in the last 5 minutes of cooking. Leftovers keep refrigerated up to three days and thin nicely with extra milk when reheated gently. Serve with a simple green salad dressed with lemon and oil.
