Creamed eggs on toast with milk

  • 1 cup [240 ml] organic 2% reduced fat milk

Staples

  • 6 eggs
  • 3 tablespoons [43 g] butter
  • to taste salt
  • to taste pepper

  1. Toast 4 slices of bread until golden and butter each slice with half a tablespoon of butter, then set them on two plates.
  2. Crack 6 eggs into a bowl, pour in 1 cup of milk, and whisk until fully combined. Season with salt and pepper to taste.
  3. Melt the remaining 2 tablespoons of butter in a large skillet over low heat. Pour the egg mixture into the pan and stir often with a spatula, scraping from the bottom and sides, until the eggs are just set but still soft and creamy, about 4 to 5 minutes.
  4. Spoon the creamed eggs over the buttered toast and serve right away.

Note Swap milk for cream if you find it. Leftovers keep cold for one day; reheat gently with a splash of milk. Serve with sliced tomato, fresh herbs, or a green salad on the side.
