Chocolate milk custard tart

The shelf gives you sweet chocolate milk and time is short, so this tart turns it into silken custard in a buttery crust and finishes under the broiler. No added sugar needed, no cream to hunt for. It cooks while you clear your desk.

  • 2 cups Land O Lakes chocolate 2% reduced fat milk

Staples

  • 4 tablespoons butter
  • 6 tablespoons [50 grams] flour
  • 1/4 teaspoon salt
  • 2 eggs

  1. Set the oven to 400 degrees F [200 degrees C]. Melt 3 tablespoons of butter in a small bowl and mix in 6 tablespoons of flour and 1/4 teaspoon of salt until it clumps. Press this mixture firmly into a 6-inch baking dish or small tart pan to form an even crust and bake for 8 minutes until pale.
  2. While the crust bakes, whisk together 2 cups of the chocolate milk with 2 eggs in a bowl until smooth. When the crust is pale and set, pour the custard in and dot the top with 1 tablespoon of butter cut into pieces.
  3. Bake for 18 to 20 minutes at 400 degrees F [200 degrees C] until the custard is just set but still trembles slightly at the center.
  4. Turn the broiler to high and broil the tart 2 inches from the flame for 1 to 2 minutes until the top browns lightly; watch it closely so it does not burn.

Note This tart also works with half the chocolate milk replaced by whole milk if you have it. Leftovers keep refrigerated for two days and are good cold or gently reheated. Serve with a small glass of milk and a spoon.
