Cheese toast with tomato and onion

American cheese melts into a salty, unctuous blanket over crisp toast, with fresh tomato and raw onion to cut through the richness. This shelf gives you one ingredient, so we build around it with what a weeknight kitchen usually holds. Supper in fifteen minutes.

  • 1 medium tomato

  • 8 slices American cheese product slices

Staples

  • 4 slices bread
  • 2 tablespoons butter
  • 1/4 medium onion
  • to taste salt
  • to taste pepper

  1. Heat the oven to 425°F [220°C]. Butter 4 slices of bread on one side and lay them buttered side down on a baking sheet.
  2. Slice 1/4 of a medium onion into thin rings and slice 1 medium tomato into 8 thin rounds. Scatter half the onion over the bread, divide the 8 cheese slices between the 4 slices, then layer the tomato slices on top.
  3. Bake until the cheese has melted and the bread is golden at the edges, 5 to 7 minutes. Meanwhile, toss the remaining raw onion with a pinch of salt.
  4. Top each toast with the raw onion, season with salt and pepper, and serve right away.

Note Swap the tomato for cucumber slices, or add a handful of arugula after baking. Leftovers keep one day wrapped; reheat gently in a low oven. Serve with a simple salad or soup alongside to stretch the meal.
