Pan-seared mushrooms with cream and thyme

A cream sauce built in one pan over fresh mushrooms, quick enough for a weeknight and rich enough to stretch a small shelf. The heavy cream is the star here, thickened with its own emulsifiers into something silky that coats each mushroom.

  • 2 cloves garlic

  1. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Slice 12 ounces of mushrooms into thirds and add them to the hot pan, spreading them in one layer. Let them brown without stirring for 3 minutes, then toss and brown the other side for 2 minutes until golden. Season with salt and pepper.
  2. Push the mushrooms to the side and add 1 tablespoon of butter to the center. Mince 2 garlic cloves into the butter and let it bloom for 30 seconds, stirring constantly, until fragrant.
  3. Pour 1 cup of heavy cream into the pan and add 1 teaspoon of dried thyme. Stir to combine and let it simmer for 3 to 4 minutes, stirring often, until the sauce thickens slightly and coats the mushrooms. The guar gum and carrageenan in the cream will help it tighten. Taste and adjust salt and pepper.

Note Swap fresh thyme for dried if you have it, using 1 tablespoon. The sauce keeps refrigerated for two days; reheat gently with a splash of water. Serve over buttered toast, polenta, or pasta, or alongside a simple green salad and crusty bread to soak up the cream.
