Creamed eggs with toast

Silky scrambled eggs cloaked in rich lactose-free cream, served over buttered toast. This shelf holds the foundation for one of weeknight cooking's gentlest, fastest dinners when you have nothing else on hand.

Serves 2. 12 minutes, 10 at the stove.

  • 2/3 cup [160 ml] lactose-free half & half milk & cream (Land O Lakes)

Staples

  • 6 eggs
  • 2 tablespoons [28 g] butter
  • to taste salt
  • to taste pepper
  • 2 slices bread

  1. Heat a heavy skillet over medium heat. While the pan warms, toast 2 slices of bread until golden and spread each with a small amount of butter.
  2. Crack 6 eggs into a bowl and whisk with 2/3 cup of the lactose-free half & half, 1/4 teaspoon of salt, and a few grinds of pepper until fully combined.
  3. Add 2 tablespoons of butter to the warm skillet. When it foams, pour in the egg mixture and stir gently and often with a rubber spatula, scraping the pan's edges as curds form. Stop when the eggs look barely set but still glossy, about 3 to 4 minutes.
  4. Divide the creamed eggs between the two pieces of toast. Taste and adjust salt and pepper as needed. Serve at once.

Note Swap the eggs for cream of mushroom soup stirred into the half & half, heated through over medium, if you want a sauce to pour over the toast instead. Leftovers keep covered in the fridge for one day. Serve with a bitter green salad or sliced tomatoes.
