Creamy tomato pasta with half and half

When the shelf is bare but for half and half, reach for pasta and canned tomatoes to build a warm, weeknight sauce. The cream mellows the acidity and turns a simple tomato base into something you want to eat right now.

Serves 2. 20 minutes, 15 at the stove.

  • one 14.5 oz can canned tomatoes

  • 1 cup Land O Lakes rich & creamy lowfat half and half

Staples

  • 8 oz pasta
  • 2 tablespoons butter
  • 2 cloves garlic
  • to taste salt
  • to taste pepper

  1. Bring a large pot of salted water to a boil and add 8 oz pasta; cook until just shy of tender, then reserve 1 cup pasta water before draining.
  2. While the pasta cooks, melt 2 tablespoons butter in a wide skillet over medium heat, then add 2 minced garlic cloves and cook until fragrant, about 30 seconds.
  3. Pour in one 14.5 oz can tomatoes with their juice, breaking them up with a spoon, and simmer until the sauce darkens slightly, about 3 minutes.
  4. Stir in 1 cup half and half and warm through, then taste and season with salt and pepper.
  5. Add the drained pasta to the skillet along with 1/4 cup reserved pasta water, toss gently, and add more pasta water a splash at a time if the sauce seems thick.

Note Swap canned tomatoes for jarred roasted red peppers for a milder sauce. Leftovers keep covered in the fridge for two days and thin with a little water when reheating. Serve with crusty bread to soak up the sauce or a handful of grated cheese if you have it.
