Baked potato with sour cream and chive topping

A baked potato split and topped with the sour cream from the shelf makes a simple, warming dinner that needs nothing else tonight. The chives and onion in the product do all the seasoning work. Serve it with a side salad or roasted vegetables if you want.

  1. Heat the oven to 400°F (200°C). Scrub 2 large russet potatoes under cold water, pat dry, and prick each one several times with a fork. Place them directly on the oven rack and bake until a knife slides through the thickest part without resistance, about 40 minutes.
  2. When the potatoes are tender, split each one lengthwise and open the halves. Scoop out a little of the flesh to make room for the topping, then fluff the interior with a fork. Dot each half with 1/2 tablespoon butter and a pinch of salt.
  3. Top each potato half with 2 tablespoons of the sour cream with chives and onions from the shelf, dividing it evenly. Serve warm.

Note Swap regular sour cream for the flavored one, then top with grated cheddar or a fried egg. Leftovers keep two days in the fridge and reheat gently in a low oven. Serve with a side of roasted broccoli or a simple green salad.
