Creamy egg noodles with mushrooms

A weeknight pasta built on half and half that turns simple ingredients into something rich and warm. Mushrooms sauté down to deepen the cream, and the whole thing comes together in one pan while the noodles cook. Comfort food when you want it fast.

  • 2 tablespoons butter
  • 2 cloves garlic

  1. Bring a pot of salted water to a boil and cook 6 ounces of egg noodles until tender. While they cook, slice 8 ounces of mushrooms into thin pieces.
  2. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the mushrooms and cook until they release their liquid and begin to brown, about 5 minutes, stirring occasionally; this concentrates their flavor.
  3. Mince 2 cloves garlic and add them to the skillet, cooking for 30 seconds until fragrant. Pour in 1 cup of half and half, bring to a gentle simmer, and cook for 2 minutes to marry the flavors.
  4. Drain the pasta when tender and transfer it to the skillet with the cream sauce. Toss to coat, season with salt and pepper to taste, and serve right away while hot.

Note Swap in any mushroom variety you have on hand, or use sliced zucchini or spinach instead. Leftovers keep in a sealed container for two days; reheat gently in a skillet with a splash of water. Serve with a green salad or a piece of crusty bread to soak the sauce.
