Bulgogi bowl with udon and quick greens
This kit bowl comes together in minutes with just a hot pan and a few vegetables stirred in to make it feel fresh. The noodles and sauce do the work; you add crunch and colour for a complete meal.

- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Slice 4 ounces mushrooms and tear 4 ounces bok choy into bite-size pieces, keeping stems and leaves separate.
- Add the mushroom slices and bok choy stems to the hot pan and cook for 2 minutes, stirring, until they soften slightly. Add the leaves and cook for 1 minute more until wilted.
- Open the kit and add both the cooked udon noodles and beef from the bowl to the pan along with 3 tablespoons of the bulgogi sauce. Toss everything together over the heat for 2 minutes until heated through and coated.
- Divide between two bowls. Taste and add salt if needed. Drizzle with the remaining sauce to taste.
Note You can swap the greens for any quick-cooking vegetable: asparagus, snap peas, or broccoli florets work well. Store leftovers covered in the fridge for two days. Serve with a squeeze of lime and sliced scallions on the side if you have them.
