Cilantro lime rice with eggs and greens

A quick bowl built on the flavored rice from the shelf, topped with a fried egg and whatever greens taste good tonight. This is the kind of dinner that comes together in the time it takes rice to heat.

Serves 2. 15 minutes, 8 at the stove.

  • 2 cups leafy greens such as spinach or arugula

  • 1 package cilantro lime flavored hint of salt ready to heat rice

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 2 eggs

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. While the oil heats, heat the cilantro lime rice according to the package directions in another pan or in the microwave.
  2. When the oil shimmers, crack 2 eggs into the skillet and cook until the whites are set and the yolks are done to your liking, about 3 to 4 minutes for soft yolks. Season with salt and pepper.
  3. Divide the warm rice between two bowls and top each with a fried egg and 1 cup of raw greens. The heat of the rice wilts the greens slightly. Serve at once.

Note Swap the greens for cooked broccoli or roasted peppers if you have them. Leftover rice keeps refrigerated for up to three days and reheats in the microwave. Serve with hot sauce or lime wedges on the side.
