Bagel pizzas with cinnamon raisin base

Sweet bagels become savory dinner pizzas when topped with melted cheese and a quick tomato sauce. The cinnamon raisin base adds an unexpected note that balances salty cheese and tangy sauce. It's fast enough for a weeknight and uses what you have.

Serves 2. 20 minutes, 8 at the stove.

  • 1 cup canned crushed tomatoes
  • 6 ounces part-skim mozzarella

  • 4 slices sliced cinnamon raisin bagels

  • 1 tablespoon oil
  • 1 clove garlic
  • pinch salt
  • pinch pepper

  1. Heat 1 tablespoon oil in a skillet over medium heat and mince 1 garlic clove into it. Stir in 1 cup crushed tomatoes with a pinch each of salt and pepper, then simmer while you assemble the pizzas.
  2. Arrange 4 bagel slices on a sheet pan cut-side up. Shred 6 ounces mozzarella and divide it evenly over each slice, then spoon about 2 tablespoons of warm tomato sauce over each.
  3. Broil the pizzas on a sheet pan 4 inches from the heat until the cheese bubbles at the edges and begins to brown, about 3 minutes. The cue is bubbling cheese and browning edges.

Note Swap fresh mozzarella for part-skim if you like it creamier. Leftovers keep covered in the refrigerator for two days and reheat gently in a low oven. Serve with a side salad or raw vegetables to cut the sweetness of the base.
