Heat and Eat Rice Pilaf with Eggs

Soft-cooked eggs perched on buttered rice pilaf make a weeknight dinner that tastes made from scratch but takes twenty minutes start to finish. The pilaf comes together while you poach or soft-boil the eggs, and a handful of herbs at the end lifts the whole plate.

Serves 2. 20 minutes, 8 at the stove.

  • 1 package heat and eat original rice pilaf mix

  • 1 tablespoon butter
  • 2 eggs
  • pinch salt
  • pinch pepper

  1. Bring 2 cups water to a boil in a medium pot. Pour in the rice pilaf mix and stir well, then return to a simmer. The mixture will thicken and absorb the water as it cooks, about 12 minutes, until the orzo is tender and the rice is fluffy.
  2. While the rice cooks, bring a shallow pan of water to a gentle simmer. Crack 2 eggs into the water and poach until the whites set but the yolks stay soft, about 4 minutes, or soft-boil them in a small pot if you prefer.
  3. When the pilaf is done, stir through 1 tablespoon butter and taste for salt and pepper. Divide between two shallow bowls and top each with one poached egg and a pinch of salt and pepper. Tear 2 tablespoons fresh parsley over top and serve at once.

Note Swap the poached eggs for a fried egg cooked in butter if you want a crisper yolk. The pilaf keeps covered in the fridge for two days and reheats in a microwave or small pot with a splash of water. Serve with a green salad or steamed greens on the side to balance the richness.
