Soft flour tortillas with seasoned ground beef tacos

These tacos use the kit's tortillas with seasoned ground beef cooked from scratch, saving the packaged seasoning for another night. Build them with whatever toppings you have on hand and you'll have dinner in twenty minutes.

Serves 2. 25 minutes, 20 at the stove.

Staples

  • 2 tablespoons oil
  • to taste salt
  • to taste pepper
  • 2 cloves, minced garlic
  • 1 small, diced onion
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Sauté 1 small diced onion and 2 minced garlic cloves until soft, about three minutes.
  2. Add 1 pound ground beef, breaking it up with a spoon as it cooks, until no pink remains, about five minutes. Stir in 1 teaspoon cumin, 1/2 teaspoon chili powder, salt and pepper to taste.
  3. Warm 8 tortillas directly over a gas flame or in a dry skillet for a few seconds on each side until pliable, working in batches.
  4. Fill each warm tortilla with a spoonful of seasoned beef and toppings of your choice. Serve with lime wedges and hot sauce if you have them.

Note Swap the ground beef for shredded rotisserie chicken or crumbled cooked chorizo if preferred. Leftover cooked beef keeps in the refrigerator for three days and works well in quesadillas or over rice. Serve with cilantro, diced onion, salsa, and lime.
