Chana masala with spinach and cauliflower

A spiced chickpea curry that comes mostly cooked in a jar, needing only warming and a stir of fresh spinach to finish. This shelf does the work for you on a night when energy is low and dinner needs to land fast.

  • 2 cups loosely packed [about 60 grams] fresh spinach

  • 1 jar [about 700 grams] chana masala with brown basmati rice

Staples

  • 1 tablespoon oil
  • to taste salt
  • to taste pepper

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Tip the entire contents of the jar into the pan and stir to combine the rice, chickpeas, cauliflower, and curry sauce. Let it warm through for 3 to 4 minutes, stirring often so nothing sticks to the bottom.
  2. When the curry is steaming and the rice is hot, add 2 cups fresh spinach in handfuls, stirring between each addition until the leaves wilt completely. This takes 1 to 2 minutes.
  3. Taste and season with salt and pepper as needed. Divide between two bowls and serve at once.

Note Swap spinach for any tender greens you have on hand, or skip it entirely and top with a fried egg if that appeals. Leftover curry keeps refrigerated for three days; reheat gently with a splash of water. Serve with a wedge of lemon or a dollop of yogurt if you have it.
