Southwest brisket fried rice, quick pan

This is a shortcut fried rice built from a cooked brisket mix that's already seasoned and balanced with ketchup. Stir it in a hot pan with fresh egg and you have dinner in ten minutes. The onion and garlic wake it up.

Serves 2. 15 minutes, 12 at the stove.

  • 1 package southwest style brisket fried rice

Staples

  • 2 tablespoons oil
  • 1 small onion
  • 2 cloves garlic
  • 2 eggs
  • to taste salt
  • to taste pepper

  1. Chop 1 small onion and mince 2 cloves garlic. Crack 2 eggs into a bowl, whisk with a pinch of salt, and set aside.
  2. Heat 2 tablespoons oil in a large skillet over high heat until it shimmers. Add the onion and cook, stirring, until it softens and the edges turn golden, about 2 minutes.
  3. Stir in the garlic and cook for 30 seconds until fragrant. Pour in the entire package of southwest brisket fried rice and stir constantly, breaking up any clumps, until heated through and everything is coated, about 3 minutes. Taste and adjust salt and pepper.
  4. Push the rice mixture to the edges of the skillet, leaving space in the center. Pour the whisked eggs into the middle and let them set for 10 seconds, then scramble and fold them into the rice until fully combined, about 1 minute.

Note Swap the eggs for a splash of soy sauce and a handful of chopped cilantro if you prefer. Leftovers keep cold for three days and taste good reheated in the microwave. Serve with lime wedges and hot sauce on the side.
