Szechuan asparagus with egg noodles

Staples
- 6 ounces pasta
- 2 eggs
- 1 teaspoon oil
- to taste salt
- Bring a large pot of salted water to a boil, add 6 ounces of egg noodles, and cook until al dente, about 8 minutes. Drain and set aside.
- Heat 1 teaspoon of oil in a large skillet over medium heat, crack 2 eggs into the pan, and cook until the whites are set but the yolks are still soft, about 3 minutes. Transfer to a plate.
- Pour the contents of the Szechuan asparagus package into the same skillet over medium heat and warm through, stirring gently, about 2 minutes.
- Divide the noodles between two bowls, spoon the warm asparagus and sauce over the top, and crown each with a fried egg.
Note Swap the fried eggs for a tangle of shredded roasted chicken if you have it. Leftovers keep, covered, for two days and taste just as good cold the next day at lunch. Serve with a wedge of lime if you have one, or finish with a grind of black pepper.
