Progresso sausage and potato soup with greens

A can of hearty soup gets stretched with fresh spinach and a splash of vinegar to brighten it for two. Braise the greens right in the pot, season it once more at the end, and you have a proper dinner ready in minutes.

Serves 2. 15 minutes, 5 at the stove.

  • 3 oz fresh spinach
  • 2 tablespoons red wine vinegar

Staples

  • 1 clove, minced garlic

  1. Pour the contents of the can into a medium pot and set over medium-high heat. Stir in 1 minced clove of garlic and bring to a simmer, about 3 minutes.
  2. Stir in 3 oz of fresh spinach in two additions, letting each handful wilt before adding the next, then pour in 2 tablespoons of red wine vinegar. Taste and add salt and pepper as needed.
  3. Ladle into two bowls and serve while hot.

Note Swap fresh spinach for frozen spinach, thawed and squeezed dry. Leftovers keep refrigerated for two days; reheat gently. Serve with crusty bread to soak up the broth, or over rice to stretch further.
