Pasta with artichoke sauce

Rao's artichoke sauce is a ready-made dinner built right in; all you need is pasta and a handful of things to cook with. This shelf does the heavy lifting, so you can eat in under twenty minutes.

Serves 2. 20 minutes, 15 at the stove.

  • 1 jar (24 oz) artichoke sauce, artichoke (Rao's Homemade)

Staples

  • 10 oz pasta
  • for pasta water salt
  • 1 clove garlic
  • 1 tablespoon oil
  • to taste pepper

  1. Set a pot of salted water to boil. While you wait, mince 1 clove garlic and warm 1 tablespoon oil in a skillet over medium heat until fragrant, about 1 minute.
  2. Add the whole jar of artichoke sauce to the skillet and stir gently to coat it with oil. Let it warm through for 3 to 4 minutes, stirring now and then.
  3. When the water is rolling, add 10 oz pasta and cook until it is tender but still has a bite, about 2 minutes less than the package says. Start tasting it at the lower time.
  4. Scoop out 1 cup of the starchy pasta water, then drain the pasta and add it straight to the sauce. Toss everything together, loosening it with a splash of the pasta water if needed until the sauce coats each piece. Taste and add salt and pepper.

Note Swap in spaghetti, penne or whatever pasta you have. Leftovers hold in a sealed container in the fridge for three days; reheat gently with a splash of water. Serve with bread for soaking and a green salad on the side.
