Raos chicken noodle soup with greens

This shelf holds a nearly complete meal, so tonight you doctor it gently with fresh spinach and a stir of Parmesan to make it feel like your own. A weeknight dinner that takes the thinking out of supper.

  • 2 handfuls [about 2 oz] fresh spinach
  • 2 tablespoons grated Parmesan cheese

  • 1 jar [24 oz] chicken noodle slow simmered italian style soup, chicken noodle (Rao's)

Staples

  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 2 cloves, sliced thin garlic

  1. Heat 1 tablespoon olive oil in a medium pot over medium heat. Add 2 cloves sliced garlic and cook, stirring, until fragrant, about 1 minute.
  2. Pour the entire jar of soup into the pot and bring to a gentle simmer, stirring occasionally, about 5 minutes.
  3. Stir in 2 handfuls of fresh spinach and let it wilt into the broth, about 2 minutes. Taste and season with salt and pepper as needed.
  4. Divide between two bowls and top each with 1 tablespoon grated Parmesan cheese. Serve at once.

Note Swap the spinach for shredded kale or arugula. Keeps covered in the refrigerator for two days; reheat gently on the stove. Serve with crusty bread or a green salad on the side.
