Roasted vegetables with herbed yogurt

A sheet pan supper that leans on a ready-made yogurt dip as both sauce and base for a light, vegetable-forward dinner. The dip's herbal notes deepen when warmed, while roasted roots and greens get an unexpected creaminess. Quick, simple, and kind to a tired weeknight.

  • 8 oz Brussels sprouts or broccoli
  • 10 oz waxy potatoes

  • 1 container mediterranean herb greek yogurt dip

  • 2 tablespoons olive oil
  • to taste salt

  1. Heat your oven to 425°F [220°C]. Cut 10 oz waxy potatoes into 1-inch pieces and 8 oz Brussels sprouts in half lengthwise. Toss both with 2 tablespoons olive oil, salt, and pepper on a sheet pan, spreading them in one layer.
  2. Roast until the vegetables are golden and tender at the edges, about 20 minutes, stirring them halfway through.
  3. Spoon half the yogurt dip into a serving bowl and warm it gently over low heat or alongside the vegetables in the oven for the last few minutes, stirring gently if warming it over heat. The dip will loosen and become more sauce-like.
  4. Pour the warm dip over the roasted vegetables on the sheet pan or arrange the vegetables on plates and spoon the dip over them. Taste and add salt and pepper as needed.

Note Swap waxy potatoes for fingerlings or any sturdy root vegetable you have; roast harder vegetables a few minutes longer. Leftovers keep in the fridge for two days and can be eaten cold or gently reheated. Serve with crusty bread or alongside a simple green salad dressed with lemon and oil.
