Crisp chicken with tzatziki and warm pita

Tzatziki is a complete sauce when poured over hot chicken, so tonight you build dinner around the dip. Seasoned chicken thighs cook fast, and the yogurt cools them just enough to eat right away.

  • 1 lb boneless skinless chicken thighs
  • 4 pieces pita bread

  • 1 container (10 oz) tzatziki cucumber dill greek yogurt dip

  • 1/2 teaspoon pepper
  • 2 tablespoons oil

  1. Pat 1 lb boneless skinless chicken thighs dry with a paper towel, then season both sides with 1 teaspoon salt and 1/2 teaspoon pepper. Heat 2 tablespoons oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
  2. Set the chicken in the hot pan skin-side down if present, then set a timer for 6 minutes. Once the bottom browns, flip each piece and cook for another 5 minutes until an instant-read thermometer reads 165°F (74°C) at the thickest part.
  3. Warm the 4 pita bread pieces in the same pan for 30 seconds per side while the chicken rests, or wrap them in a damp towel and warm in the microwave for 1 minute.
  4. Divide the chicken between two plates, spoon half the tzatziki dip over each portion, and serve with warm pita on the side.

Note Swap chicken thighs for chicken breast if you prefer leaner meat, though thighs stay juicier. Leftover chicken keeps in the refrigerator for three days and is good shredded into salads or grain bowls. Serve with fresh tomato slices and a simple olive oil and lemon salad on the side.
