Lemon miso shrimp and scallops with greens

This frozen shrimp and scallops product has lemon, miso, and butter built in, so a quick pan sauce comes free. Leafy greens from the pantry round it out into dinner without fuss.

Serves 2. 15 minutes, 12 at the stove.

  • 4 ounces spinach or other leafy greens
  • for serving (optional) rice

  • 1 package lemon miso shrimp and scallops

Staples

  • 1 tablespoon oil
  • 2 cloves garlic
  • 1 pinch salt
  • to taste pepper

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Mince 2 cloves garlic and add to the pan, stirring until fragrant, about 30 seconds.
  2. Spread 4 ounces leafy greens over the garlic and cook, stirring often, until wilted, about 2 minutes. Season with a pinch of salt and pepper, then push to the side of the pan.
  3. Add the frozen shrimp and scallops directly from the package to the empty side of the pan. Cook without stirring for 2 minutes so they begin to thaw and brown.
  4. Stir everything together and cook until the shrimp and scallops are heated through and opaque, about 3 minutes more. Taste and adjust seasoning with salt and pepper if needed.

Note Swap the greens for broccoli or bok choy if you prefer. Refrigerate leftovers up to two days. Serve over rice or noodles, or with crusty bread to soak up the sauce.
